- 1 lb chicken breast
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp pepper
- 1 tsp salt
- 1/2 tsp dried oregano
- 1 lime juiced
- 10 oz can Rotel
- 15 oz can black beans drained and rinsed
- 15 oz can corn drained
- 2 tbs minced garlic
- 1 red onion diced
Optional toppings for the end:
- Cooked white rice
- Sliced lettuce
- Avocado
- Diced tomato
To a slow cooker add all of the ingredients except the toppings for the end.
Stir and place the lid on top cook on LOW for 6 hours OR HIGH for 4-5 hours or until the chicken is completely cooked.
Once cooked shred the chicken with two forks and serve in a bowl with your favorite burrito bowl toppings.
