Ingredients

  • 1/2 cup cooked crumbled bacon
  • 1 yellow onion diced
  • 1 red bell pepper diced
  • 1 tbsp minced garlic
  • 1 cup frozen corn
  • 3 cups cooked shredded chicken I used part of a rotisserie chicken
  • 1/2 cup sour cream
  • 3 oz cream cheese softened
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 1/2 cups cheddar or colby jack cheese, shredded

Instructions

  • Preheat oven to 350 °F.
  • To a large bowl add in all of the ingredients except for 1 cup of the cheese. Stir well.
  • Spray a large casserole dish with non stick spray.
  • Add the casserole into the baking dish and spread out.
  • Sprinkle the remaining cheese over the top.
  • Bake for 45 minutes.
