Ingredients

  • 1 tbsp olive oil
  • 12 oz frozen bag spinach
  • 1 yellow onion diced
  • 8 oz fresh mushrooms sliced
  • 3 cups cooked shredded chicken I used part of a rotisserie chicken
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1 cup mozzarella cheese shredded

Instructions

  • Preheat oven to 350 °F
  • To a large pan on the stove, over medium heat, add the oil. Once hot, add the frozen spinach, onion, and mushrooms. Stir well and let cook for 10 minutes, stirring occasionally, until the veggies are tender. Stir in all seasonings.
  • Spray an 8x8 baking dish with non-stick spray.
  • Add the vegetable mixture to the bottom of the baking dish.
  • Top it with the chicken ,then the mozzarella cheese.
  • Bake for 30 minutes.
