Chicken Black Bean and Rice Casserole

Ingredients

  • 1 cup uncooked white rice
  • 1 cup chicken broth
  • 1/4 cup salsa
  • 2 tbsp melted butter
  • 1 15 oz can black beans, drained and rinsed
  • 2 lbs chicken breasts
  • 10 oz enchilada sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F.
  • Spray a 9x13-inch baking dish with non-stick spray.
  • In the baking dish, add rice, chicken broth, salsa, melted butter, black beans, chicken breasts, enchilada sauce, salt, pepper, and taco seasoning. Stir to combine the ingredients evenly.
  • Cover tightly with foil and bake for 55-60 minutes.
  • Remove the foil, sprinkle cheese over the top, and bake for an additional 15 minutes, or until the rice is tender and the chicken is fully cooked.
  • Serve warm and enjoy!
