No Peek Chicken and Rice is such a simple yet delicious recipe that is made with simple ingredients in one baking dish in the oven, cooked to perfection without peeking.
The covering of the casserole dish is how this no peek chicken recipe can cook the chicken and rice together from the steam.
This no peek chicken casserole is an easy dinner recipe and a great recipe for busy weeknights and little effort. You can mix it up, put it in a prepared baking dish, pop it in the oven and you are good to go!

Ingredients for the No Peek Chicken:

- Rice: you will need to get a box of Zatarain’s Yellow rice to make this rice dish
- Creamy soup: when making this creamy rice you will need a can of cream of mushroom soup and cream of celery soup
- Cooking liquid: water is necessary for making this rice recipe
- Protein: for the best results I like to use chicken tenderloins
- Seasoning: you will need ground black pepper and Lawry’s seasoned salt or kosher salt
- Cheese: use freshly shredded cheddar cheese for the best melty topping
How to make the No Peek Chicken:
Preheat oven to 350 degrees.
Grease a 9×13 baking dish with non-stick spray.

In the baking dish whisk together the yellow rice, cream of mushroom, cream of celery, and water.
Place the chicken on top of the rice and season with the seasoned salt and pepper.

Cover tightly with aluminum foil and bake for 50 minutes (no peeking while baking!).

Remove from oven remove the foil sprinkle cheese over the top. Bake for an additional 15 minutes.

Rice to use:
When making this easy recipe, you will want to use some of the instant rice or minute rice to make sure that this flavorful rice will cook all the way through.
We prefer to use the yellow rice but regular white rice could work as well when mixed with the creamy soup base. Brown rice would not be suggested as it normally takes longer to cook.
Type of chicken to use:
Use either chicken tenders or small pieces of boneless skinless chicken breasts to make sure the cooking time for the chicken will be enough without overcooking the rice and still have tender chicken.
Change up the flavor:
Instead of using the seasoned salt, you could also combine the cream soup with an envelope of onion soup mix for another version of this cozy dinner recipe.
Cream soup substitutes:
Feel free to substitute the soups listed with a can of cream of chicken soup if you prefer.
