Ham Chicken & Rice Casserole

Ingredients

  • 1 tbs butter

  • 1 tbs olive oil

  • 1 lb chicken breast, cubed

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 lb smoked pre cooked ham, cubed

  • 1 white onion, diced

  • 1 tbs minced garlic

  • 14 oz can petite diced tomatoes

  • 2 cups chicken broth

  • 1 cup uncooked rinsed jasmine rise

  • 1 tsp paprika

  • 1/2 tsp dried thyme

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1 cup frozen peas

Directions

  • To a large saute pan or pot over medium high heat add in the butter and oil. When the butter is melted add in the chicken and season with 1/2 tsp salt and pepper brown the chicken on each side.
  • Add the ham to the pan and brown it on each side for about 2-3 minutes.
  • Add in the diced onion, minced garlic, diced tomatoes, chicken broth, rice, seasonings, and frozen peas. Stir well and bring this mixture up to a simmer then turn the heat to low let simmer covered for 18-22 minutes stirring occasionally until the rice is tender.
