Black Bean Hash Brown Casserole

Ingredients

  • 29 oz can black beans, drained and rinsed

  • 4.2 oz container dehydrated hash browns

  • 14 oz can diced tomatoes, okra, and corn, partially drained

  • 1 1/2 tbsp taco seasoning

  • 2 tsp dried oregano

Directions

  • Preheat oven to 350 degrees
  • Fill the dehydrated potatoes with hot water up to the fill line and let set according to the package instructions.
  • To a large bowl, add in all of the ingredients and stir well.
  • Spray 9 x 13 baking dish with nonstick spray add the casserole in and spread it out.
    Bake for 30 minutes.
