Vegetable Lo Mein

Ingredients

  • 2 tbs olive oil

  • 3 large carrots, julienned

  • 1 yellow onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 head of broccoli, chopped

  • 1 tbs minced garlic

  • 8oz lo mein doodles

  • Sauce:

  • 2 tbs brown sugar

  • 3 tbs low sodium soy sauce

  • 1/3 cup vegetable broth

Directions

  • To a large deep skillet over medium heat add the oil, once hot add all of the vegetables stirring frequently let cook for 5-8 minuets or until vegetables are to your desired softness.
  • While vegetables are cooking, bring a large pot of water to a boil and add in the noodles and cook according to the box instructions, drain and set to the side.
  • Add all of the sauce ingredients into a small bowl whisk well.
  • Once vegetables are tender stir in the minced garlic. Now add in the cooked drained noodles and sauce. Stir well and let simmer for 4-5 minuets. Enjoy!

    Julia, I feel sorry for the vegetarians you cooked in the Vegetable Lo Mein recipe #2. Have you ever heard of the period punctuation? You have complete run-on sentences in every recipe you print. The meals are good, but have to be read more than once to figure out your instructions. How about a proof reader?
