Sweet Potato and Chicken Dinner

Ingredients

  • 2 large sweet potatoes, diced small

  • 1 large yellow onion, diced

  • 2 tbsp olive oil

  • 1/2 + 1/3 cup chicken broth (divided)

  • 1 tbsp minced garlic

  • 14 oz can fire roasted diced tomatoes

  • 12 oz can chicken, drained

  • 2 cups fresh spinach, chopped

  • 1 tsp pepper

  • 1 tsp salt

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1/2 cup Parmesan cheese

Directions

  • To a large pan on the stove over medium heat add in the olive oil. Once the oil is hot, add in the sweet potato onion and 1/2 cup of the chicken broth. Stir and cover with a lid. Let cook for 8 to 10 minutes, stirring occasionally to soften the sweet potato’s
  • Stir in the minced garlic
  • Stir in the diced tomatoes, remaining broth canned chicken, spinach, seasonings stir and let cook for five minutes altogether.
  • Stir in the Parmesan cheese and enjoy
