I’m always looking for ways to cut down on my grocery budget. Whether grocery prices are higher, or I have a certain spending goal I want to hit, I’m always looking to spend less. Eating cheap meals doesn’t have to be mundane or boring. My goal is to always make delicious and unique meals that are extremely budget-friendly!

This Spanish Rice Soup is a very easy and cheap meal that isn’t lacking in flavor! Honestly, it doesn’t taste like a budget meal, thanks to a few super flavorful ingredients.

Ingredients for Spanish Rice Soup

You all know that I always shop at Walmart, so I got all of these ingredients there. If you can’t find the exact ingredients, I’m sure you could use something similar and it would turn out just fine.

How to Make Spanish Rice Soup

This soup is very simple to make. Basically, all you have to do is sautee the onions and peppers in olive oil in a dutch oven, add in all of the rest ingredients, and simmer for about 10 minutes. That’s about it! Just be sure to stir everything occasionally, so the rice doesn’t stick to the bottom of the pot and burn.

To serve, ladle the soup into bowls and top with any toppings that you might like. I used chopped tomatoes, sour cream, avocado, and some fresh lime juice.

Ingredients

  • 1 tbsp olive oil

  • 1 bag frozen “seasoning blend” – onions, celery, red peppers green peppers, and parsley flakes (or just use one fresh onion and one fresh green bell pepper)

  • 1 can black beans, drained and rinsed

  • 1 can corn, drained

  • 1 bag Knorr Spanish rice

  • 1 tbsp taco seasoning

  • 6.5 cups water

  • Toppings (optional)
  • Chopped tomatoes

  • Sour cream

  • Avocado

  • Lime wedges

Directions

  • To a large Dutch oven or pot over medium heat, add the oil. Once hot, add in the bag of onions and peppers and sauté for 4-5 minutes to cook out the moisture in the vegetables. Add in the beans, corn, rice bag, seasonings, and water. Bring the mixture to a simmer, stirring occasionally, and let simmer covered for 7-10 minutes, or until the rice is tender. Make sure you stir occasionally while simmering, so the rice doesn’t stick to the bottom of the pot. Ladle into bowls and top with toppings. Enjoy!
