Sheet Pan Honey Garlic Chicken and Vegetables

Ingredients

  • 1 lb chicken breast, cut into cubes

  • 2 cups fresh broccoli florets

  • 1 red bell pepper, cut into strips

  • 2 cups carrots, diced

  • 1 tsp salt

  • 1/2 tsp pepper

  • Sauce:
  • 1/3 cup honey

  • 1 tbs minced garlic

  • 1/4 cup low sodium soy sauce

  • 2 tsp garlic powder

  • 2 tbs rice wine vinegar

Directions

  • Preheat oven to 350 degrees.
  • Spray a sheet pan with non-stick spray.
  • To a small bowl whisk together all of the “sauce” ingredients.
  • To a large bowl add the chicken, broccoli, bell pepper, carrots, salt, pepper, and the sauce mixture. Stir to coat with the sauce.
  • Place onto the sheet pan and spread out. Bake for 20 minutes or until the chicken is cooked.
  • Serve over rice and enjoy!

    This tasted good and was super easy to make! Just a matter of cutting everything up, mixing up the sauce, and pouring it over. I added mushrooms to mine for a little more variety. So good!

    This was so good! I didn’t have a bowl large enough to mix the meat and vegetables with the sauce, so I poured it over them on the pan and tossed it together the best I could.
    Everyone in my family loved this. My six-year-old particularly liked the broccoli (!!!) and commented on it multiple times. He already has asked if we can eat it again.

    I appreciate that it’s a really quick meal to put together and it yields a large amount – we had it for dinner last night and the leftovers for lunch today, and there is still enough left for a generous adult serving!
