Mini Pie Crust Quiche Bites

Ingredients

  • 9 eggs

  • 1 cup milk

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1 cup cooked crumbled bacon or sausage

  • 2 cups shredded mozzarella or cheddar cheese

  • 1 cup fresh sliced spinach

  • 1 package pillsbury pie crusts (2 count)

Directions

  • Preheat oven to 375 degrees
  • In a medium sized bowl, add the eggs, milk, salt, pepper, bacon, mozzarella cheese, and spinach whisk to combine.
  • Cut pie crust into 3.5 inch rounds and roll out twice with a rolling pin to make them thinner. Makes about 24 rounds. (if any excess dough roll out and continue to make more)
  • Grease 2 regular sized muffin tins. Place pie crusts inside creating a cup. Scoop 3 tbs of the egg mixture in each cup. Bake for 25 minutes or until the egg has set.
