Mini Egg Bites

Ingredients

  • 1 white onion, diced small

  • 1 cup fresh spinach, chopped small

  • 1 red bell pepper, diced small

  • 13 eggs

  • 1/3 cup milk

  • 1 tsp garlic powder

  • 8 oz diced ham

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp onion powder

Directions

  • Preheat oven to 350 degrees.
  • To a large bowl add in the eggs and milk, whisk well to break the yolks, now add in the rest of the ingredients and stir.
  • Spray a mini muffin pan with non stick spray (I like to use a silicone pan so they come out easy) pour the egg mixture in – don’t over flow – bake for 13 minutes or until the egg has set. Repeat until the egg mixture is gone – You will make around 50. Enjoy

    Silicon muffin pan / mini muffin pan is ESSENTIAL for these tasty breakfast bites, based on my previous experiences. They don’t release easily from even a well-greased nonstick pan and lots of scrubbing was needed to clean up. Silicon pans solved that.
