Low Carb Turkey Vegetable Skillet

Veggies and ground turkey simmer together with lots of spices and are topped with cheese for a yummy low-carb dinner.

Ingredients

  • 1 yellow onion, diced

  • 2 medium zucchinis, sliced

  • 1 lb fresh green beans, trimmed and cut into bite-sized pieces

  • 1 tbsp olive oil

  • 1 lb ground turkey or ground beef

  • 1 tbsp minced garlic

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp Italian seasoning

  • 1/2 tsp dried oregano

  • 1/2 tsp paprika

  • 14 oz fire roasted diced tomatoes

  • 1/2 cup chicken broth

  • 1 cup mozzarella cheese, shredded

Directions

  • To a large skillet over medium heat add the oil. Once hot, add in the diced onion and turkey. Break the turkey up with a spatula and cook it through.
  • Once the turkey is cooked, add in the minced garlic and seasonings. Stir well.
  • Turn the heat to low and add in the diced tomatoes, green beans, zucchini, and chicken broth. Stir well and let simmer for about 10-15 minutes, stirring occasionally, until the vegetables are tender.
  • Sprinkle the cheese on top, then cover with a lid until the cheese is melted. Enjoy!

    Zucchini and green beans were delicious with seaoning and cooking method. I would enjoy more low carb and calorie recipes. Your cookbook rocks!

    This was SOO GOOD!!! Thanks for posting this. I used more green beans to replace the zucchini, since we don’t really like zucchini, and it came out delicious!!!
