Lentil Soup

Ingredients

  • 1 onion, chopped

  • 3 carrots, chopped

  • 3 cloves garlic, pressed

  • 1 can green chiles, to taste

  • 14 oz diced tomatoes

  • 4 cups vegetable broth

  • 1 cup lentils

  • 3 tsp Herbs de Provence

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • Lime wedges (optional)

  • Shredded cheese (optional)

  • Sour cream (optional)

Directions

  • In a large pot or Dutch oven, heat the olive oil. Next, add carrots and onion to pot. Let them soften for about 5 minutes, then press in the garlic and stir until fragrant.
  • Add all remaining ingredients into the pot. Cover with lid, then bring to a simmer. Stir occasionally, for 30 minutes.
  • Serve with toppings of choice – lime wedges, shredded cheese, sour cream etc. Enjoy!

    I’ve never heard of “herbs de providence” – did you mean herbs de provence?
    Are there other herbs/herb mixtures that could be used?
