Hawaiian Chicken Sandwiches

Ingredients

  • 2 medium chicken breasts

  • 1/2 diced onion

  • 2 tbs olive oil

  • 3 tbs all purpose flour

  • Rolls to serve the chicken in

  • Sauce Ingredients
  • 1 1/2 cup pineapple juice

  • 1/4 cup brown sugar

  • 1/2 cup ketchup

  • 1 tbs low sodium soy sauce

  • 1 1/2 tsp worcestershire sauce

  • Dash of salt and pepper

  • 1 tsp onion powder

Directions

  • In a sauce pan add the oil once its hot add the diced onion and saute until soft, about 5 minutes
  • In a medium sized bowl add the sauce ingredients and whisk to combine
  • Once the onion is soft add the flour and stir for 1 minute then slowly whisk in the sauce. Simmer for 2 minutes to thicken
  • To your slow cooker add the chicken and the thick sauce over and cook on low for 6 hours or until chicken is cooked
  • Serve in rolls or over rice
