Garlic Butter Chicken Thighs with Potatoes are juicy and flavorful and are so easy to prepare. Chicken thighs, lots of seasonings, butter, and parmesan cheese make this chicken dinner a real winner!

Ingredients for Garlic Butter Chicken Thighs

Chicken thighs are one of the most underrated ingredients. This dark cut of meat has a little more fat than chicken breasts or tenderloins and is so flavorful. I love preparing them when I want something a little different than my usual routine. They do take a little longer to cook than chicken breasts, but they don’t dry out as easily.

  • small to medium-sized potatoes (you could use baby potatoes, or small red or golden potatoes)
  • minced garlic
  • onion powder
  • garlic powder
  • paprika
  • Italian seasoning
  • salt
  • pepper
  • boneless skinless chicken thighs
  • butter
  • Parmesan cheese

How to Make Garlic Butter Chicken Thighs

I like to make chicken thighs in the slow cooker when I have exactly 0 free minutes in my day, because all I have to do is dump everything in and set the timer! I usually start this recipe about mid morning or around lunchtime, so you don’t have to remember right when you get up.

First, spray a large slow cooker with non-stick spray or use a slow cooker liner. Add the potatoes, minced garlic, and half of the seasonings to the slow cooker and stir well so that all of the potatoes are coated. Then, place the chicken thighs over the potatoes and season the top of the chicken with the remaining seasonings.

Place the slices of butter on top of the chicken and cover with the lid. Cook on LOW for 6 hours or HIGH for 4-5 hours, or until the chicken is cooked through. You can check the internal temperature of the chicken to see if it is cooked through. Once it reaches 165 F, it is done. Stir in the Parmesan cheese before serving.

You can serve this dish with a side salad, steamed veggies, or some homemade dinner rolls for a complete meal.

  • 9 small to medium-sized potatoes, cut into bite-sized pieces

  • 2 tbsp minced garlic

  • 1 tsp onion powder, divided

  • 1 tsp garlic powder, divided

  • 1 tsp paprika, divided

  • 1 tsp Italian seasoning, divided

  • 1 tsp salt, divided

  • 1/2 tsp pepper, divided

  • 1 lb boneless skinless chicken thighs

  • 1/4 cup butter, sliced into small slices

  • 1/4 cup Parmesan cheese

Directions

  • Spray a large slow cooker with non-stick spray. Add the potatoes, minced garlic, and half of the seasonings and stir well. Place the chicken thighs over the potatoes and season the top of the chicken with the remaining seasonings. Place the slices of butter on top of the chicken and cover with the lid.
  • Cook on LOW for 6 hours or HIGH for 4-5 hours, or until the chicken is cooked through. Stir in the Parmesan cheese before serving. Enjoy!

    Have you tried this with bone in thighs? I was curious if any adjustments would be made if so. I love your recipes and videos!

      I would remove the skin because that can make it really greasy, but otherwise would cook up just fine.
