Fajita bowls over Taco Rice

Ingredients

  • 1 tbsp olive oil

  • 1 red onion, sliced

  • 2 bell peppers any color, sliced 

  • 1 1/2 lbs chicken breast, cubed

  • 2 tbsp taco seasoning

  • 15 oz can black beans, drained and rinsed

  • 3 cups COOKED rice

  • Optional toppings for top: shredded cheddar cheese, sour cream, lime, avocado, and more

Directions

  • To a large pan on the stove over medium high heat to add in the oil. Once the oil is hot, add in the onions, peppers and chicken then add in the taco seasoning and stir to coat the chicken and vegetables in the seasoning. Lower the heat to medium heat and cook for 8 to 10 minutes or until the chicken has cooked through. Stir in the black beans. 
  • Place some of the cooked rice in a bowl, then top with the fajita toppings and any other toppings you’d enjoy
