Chicken Avocado Ranch Burritos

Ingredients

  • 1.5 lbs chicken breast

  • 1.5 tbs taco seasoning

  • 3 tbs olive oil

  • 1 tbs lime juice

  • 1/2 cup fresh cilantro

  • 4 large burrito sized tortillas

  • 1/2 cup shredded monterey jack cheese

  • 1 large avocado, sliced

  • fresh cilantro for inside the burrito

  • Drizzle of ranch dressing for each burrito

Directions

  • Slice the chicken breasts in half horizontally (this will help the chicken cook quicker) place the chicken in a large bowl or large ziplock back add in the taco seasoning, olive oil, lime juice, and 1/2 cup fresh cilantro mix all of these ingredients in with the chicken well. Place in the refrigerated for 2 hours to marinate. (if you don’t have time to let the chicken marinate you can skip that step)
  • Heat a pan on the stove (I used a grill pan but any pan will work) then add the chicken and cook the chicken through. Once cooked remove the chicken to a cutting board and cut into smaller pieces.
  • To assemble the burritos fill each tortilla with a little bit of the cheese, chicken, avocado, cilantro, ranch dressing, and more cheese on top! Roll into a burrito. Place on a hot oiled pan and cook until the burrito crisps up. Enjoy

    I used spicy guacamole instead of avocado, and these were a big hit in my home. It’s so refreshing to have a straightforward recipe that doesn’t take many ingredients, or time, but has lots of great flavor. They are also great reheated or eaten cold out of the fridge. Thank you!
