Chicken and Yellow Rice Casserole

Ingredients

  • 9 oz bag yellow rice

  • 1 1/3 cup water

  • 2 -10 oz cans cream of mushroom soup (or any cream of soup)

  • 1 lb chicken breast sliced into strips (or boneless thighs)

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1 tsp onion powder

Directions

  • Preheat oven to 325 degrees.
  • To a large bowl add in the rice, water, and cream of mushroom soup stir well to combine the ingredients
  • Spray a 9×13 baking dish with non stick spray add the rice mixture in and spread it out
    Place the chicken on the top and sprinkle on the seasonings
  • Cover tight with foil bake for 75 minutes or until the rice is tender
