One of my favorite hacks for making a hearty and affordable meal is to use canned chicken. Canned chicken is great in casseroles or other dishes where you want to add a bit of protein at a very low cost. Plus, you don’t have to cook anything as it’s already cooked for you.

Ingredients for Chicken and Rice Casserole with Broccoli
This dish is super inexpensive to make because it’s made up of pantry staples. I like to buy canned goods in bulk when they have case lot sales at the grocery store so I always have them on hand. I can get a really good deal that way and I don’t have to take as many trips to the grocery store.
To make this Chicken and Rice Casserole, you’ll need:
- canned chicken
- Rice a Roni Long Grain and Wild Rice
- canned cream of mushroom soup
- canned cream of chicken soup
- water
- bag frozen broccoli cuts
- onion powder
- garlic powder
- paprika
- salt and pepper

How to Make Chicken and Rice Casserole with Broccoli
Making this casserole is so simple. Seriously, this is one that the kids can make. All you have to do is mix all the ingredients together, pour it into a baking dish, and bake for about 40 minutes. That’s really it.
If you want, you can skip the mixing bowl all together and pour everything straight into the baking dish and bake it there. That way you only dirty one dish. Just make sure to spray it super well with some non-stick spray.

I omitted the salt and cooked covered at 375 for an hour. I then added a little shredded cheddar cheese and cooked uncovered for 5 more minutes. Rice was cooked and it turned out great!
