Cheesy Chicken Broccoli and Rice

Ingredients

  • 2 tbs olive oil

  • 1 lb chicken breast, cubed

  • 1/4 tsp pepper

  • 1/2 tsp salt

  • 1 white onion, diced

  • 1 tbs minced garlic

  • 1 1/2 cups jasmine rice, rinsed

  • 2 cups chicken broth

  • 2 cups water

  • 3 1/2 cups fresh broccoli florets

  • 1/2 cup milk

  • 1 1/2 cups shredded cheddar cheese

Directions

  • Preheat oven to 425 degrees
  • To a large dutch oven add the oil over medium heat. Once hot add the chicken, pepper, salt, diced onion, and minced garlic stir well and let the chicken cook for 5-7 minutes (It doesn’t need to be completely cooked through at this point).
  • Add in the rinsed rice, broth, and water stir well and let simmer covered for 10 minutes stirring occasionally.
  • Add in the broccoli cover and continue to let simmer stirring occasionally until the rice is tender.
  • Stir in the milk and 1 cup of the cheese sprinkle the top with the remaining cheese. Place in the oven uncovered to bake for 15 minutes. NOTE: If your dutch oven/pot isn’t oven safe transfer to aa oven safe casserole dish and bake it in there. Enjoy!

    What if I use minute rice? How would that affect the amount of chicken broth?
