Caprese Chicken & Rice

Ingredients

  • 2 tbs olive oil

  • 1 lb chicken breast cubed

  • 3 tsp minced garlic

  • Salt and pepper to taste

  • 1/2 tsp dried basil

  • 14 oz diced tomatoes

  • 1 1/2 cups chicken broth

  • 1 tbs basil pesto

  • 1 tbs balsamic vinegar

  • 1 cup uncooked long grain white rice (rinsed)

  • 1 cup mozzarella cheese

Directions

  • In a large skillet or pot add the oil once its hot add the chicken, season with salt and pepper cook through
  • Add the dried basil and garlic stir for 20 seconds
  • Add the broth, tomatoes, pesto, and vinegar bring to a simmer
  • Add the rinsed white rice simmer for 5 minutes uncovered and 5-10 minuets covered or until the rice is tender stir frequently
  • Sprinkle mozzarella cheese on top let it melt then serve
