Buffalo Chicken Stuffed Sweet Potatoes

Ingredients

  • 4 cups shredded chicken

  • 1/4 cup buffalo sauce

  • 3 tbs ranch dressing

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 4 medium sweet potatoes

  • 1/4 cup water

  • 4 green onions

Directions

  • Using a fork poke holes in the sweet potatoes then place them on a microwave safe plate, pour the water over the top and place a sheet of wax paper over everything microwave for 5 minutes at a time until the potatoes are soft.
  • Add the cooked shredded chicken to a medium sized bowl with the buffalo sauce, ranch, and seasonings stir to combine.
  • Cut the cooked sweet potatoes open and add the buffalo chicken in the center. Drizzle with more ranch dressing and sprinkle with green onions.
