Beef Bolognese One-Pot

Ingredients

  • 2 tbs olive oil

  • 1 onion, diced

  • 2 ribs of celery, sliced

  • 1 large carrot, chopped

  • 2 tbs tomato paste

  • 1 lb LEAN ground beef, 91% 9%

  • 28oz diced tomatoes

  • 2 tsp Italian seasoning

  • dash of salt and pepper

  • 3 cups water

  • 1/2 lb fettuccine noodles

  • 1/2 cup parmesan cheese

Directions

  • To a dutch oven or large pot add the oil once it’s hot add the onion, celery, and carrots in. Saute for 7-8 minutes or until they are soft.
  • Stir in the tomato paste. Then add the ground beef and cook it through.
  • Add in the diced tomatoes, seasoning, water, and noodles stir well. Simmer uncovered for 10-18 minutes or until the noodles are cooked.
  • Stir in the parmesan cheese and enjoy!

    It I needed or wanted this recipe to be for more than 4 people and perhaps double it, should I just add more veggies and noodles or do I need to I double the meat as well? I have a family if four, however usually everyone eats seconds!
