Baked Feta Pasta

Ingredients

  • 16oz Cherry Tomatoes

  • 1/3 Cup Olive Oil

  • 1 Tsp Dried Oregano

  • 1 Tsp Dried Basil

  • Salt and Pepper to taste

  • 6 Cloves Garlic

  • 8oz Feta Cheese

  • 8oz Pasta Noodles (I used Mezzi Rigatoni)

  • Reserve 3/4 Cup of pasta water

  • 1/4 Cup Fresh Basil

Directions

  • In a 9×13 baking dish add the first 7 ingredients
  • Bake on 400 degrees for 30 minutes
  • Boil your pasta at this point. Reserve 3/4cup of the pasta water
  • Once out of the oven remove the peel off your garlic (if you haven’t ent already) add the fresh basil and mash everything together.
  • Add the pasta water in. Stir to combine
  • Add in the cooked drained pasta stir and serve!

    I have made this dinner a number of times, and we love it! The first time I followed this recipe as written. As time has gone on and I’ve made it again, I have now added some additional ingredients for nutrition, zippy flavor and fiber. I like to add a good amount of spinach, roasted red peppers and kalamata olives. ‘Delicious! Julia, thanks for your recipes, for giving us a little peek into your home life with your sweet girls, and for sharing your tips and enthusiasm!

    Really good! I had half grape tomatoes and a small can of crushed tomatoes. I didn’t add the pasta water and will next time because it was almost too rich but SO good. I’m going to try more of the uncomplicated recipes you have.
