Angel Hair Pasta with Tomatoes

Ingredients

  • 8 ounces angel hair pasta

  • 3 Roma tomatoes, diced

  • 2 green onions, sliced

  • 1/2 cup Parmesan cheese

  • 1 tbs minced garlic

  • 1/4 cup fresh basil (or 2 tsp of dried)

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/4 cup olive oil

Directions

  • Fill a large pot with water and bring it to a boil on the stove add the pasta in and cook according to the package instructions.
  • While the pasta is cooking, to a medium sized bowl add in the diced tomatoes, green onions, Parmesan cheese, minced garlic, basil, salt, and pepper. Stir well.
  • Once the pasta is tender strain then add it back into the pot. Add in the olive oil and diced tomato mixture stir well, and serve

    Hi!! This was AMAZING! I made it with fettuccine instead of angel hair, and it turned out great! I used fresh chives from my garden instead of green onions, and it was amazing!!!! Thanks so much for sharing, it was ready in a blink of an eye. 🩷🩷🩷

    Hi Julia! Excited to try this one out, my toddler picked it from one of your videos! I do have a question though. Could I use avocado oil instead of olive oil or is the flavor big on the olive oil?
