Southwest Chicken

Ingredients

  • 2 large chicken breasts

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1 lime juiced

  • 1/2 cup shredded Mexican style cheese

  • Southwest Mixture
  • 1 cup frozen corn

  • 1 can black beans, drained and rinsed

  • 4oz can diced green chilis

  • 1/4 cup chopped fresh cilantro

  • 1 diced jalapeno

Directions

  • Preheat oven to 375 F
  • Slice the chicken beasts in half horizontally now you will have four pieces of chicken.
  • Place the chicken in a greased 9×13 baking dish and season the chicken on both sides with the seasonings.
  • In a medium sided bow all the ”southwest mixture” ingredients in and stir to combine.
  • Evenly pour the southwest mixture over the chicken then drizzle the lime juice on top. Sprinkle the cheese over everything and bake for 30-35 minutes or until the chicken is cooked. Enjoy
