Antipasto Salad

With spicy peppers, charcuterie, and mozzarella cheese, Antipasto salad is a perfect side dish for a potluck or a summer cookout

Ingredients

  • 19 oz cheese tortellini

  • 1/4 cup sliced black olives

  • 1 cup sliced pepperoni, cut into small pieces

  • 1 cup sliced salami, cut into small pieces

  • 8 oz cubed mozzarella cheese

  • 1/4 cup sliced peperoncino peppers

  • Dressing
  • 1/4 cup olive oil

  • 2 tbsp red wine vinegar

  • 1/2 tbsp minced garlic

  • 1/4 tsp Italian seasoning

  • 1/4 tsp salt

Directions

  • Cook the tortellini according to the package instructions. Drain and rinse with cold water to let the tortellini completely cool down.
  • In a large bowl, combine all of the dressing ingredients and whisk well.
  • To the bowl with the dressing, add the tortellini, black olives, pepperoni, salami, mozzarella cheese, and peperoncino peppers and stir to combine. Refrigerate for at least 1 hour. Enjoy!

  • You can add any toppings you enjoy to this pasta salad, for example bell peppers or anything!
