Ingredients for Chicken and Potato Casserole:

  • Protein: Use cooked shredded chicken (part of a rotisserie chicken) and cooked bacon crumbles
  • Potatoes: A frozen bag of potatoes O’Brien or regular hash browns
  • Cream: To create the creamy base, you will need to use sour cream and one can cream of chicken soup
  • Milk: Use whatever milk you have on hand, but I prefer using whole milk for this potato casserole recipe
  • Veggies: To add vegetables to this hearty casserole, use a bag of frozen broccoli florets 
  • Cheese: Shredded cheddar cheese is the perfect topping for this comfort food casserole dish
  • Onions: Adding sliced green onions to the casserole is a great way to add more flavor
  • Seasoning: Italian seasoning and paprika are great seasonings to use with creamy potatoes

How to make Chicken and Potato Casserole:

Preheat oven to 350 degrees.

Spray a 9×13 baking dish with nonstick spray.

To a large bowl add in the chicken, frozen potatoes, sour cream, cream of chicken soup, milk, broccoli, 1/2 cup of the cheese, bacon, green onions, and seasonings. Stir well.

Add into the prepared baking dish and spread out.

Sprinkle the remaining cheese over the top cover and bake for 50 minutes.

Remove the foil and bake for an additional 20 minutes.

How to store leftover cheesy chicken potato casserole:

Fridge: Leave the leftover chicken casserole in the baking dish or remove it to place it in an airtight container and store it in the refrigerator for up to 5 days. 

Freeze: If you intend to make and freeze, place into a freezer-safe container and store it for up to 3 months in the freezer. Remove 24 hours before eating to let it thaw in the fridge.

Tips and tricks for making this easy chicken casserole:

Chicken to use: 

Make this recipe using either a cooked rotisserie chicken from the grocery store, or bake boneless and skinless chicken breasts ahead of time and shred the chicken. You could also cook chicken thighs or chicken tenders for this recipe as well.

Do I need to thaw the frozen potatoes?

Nope! For this recipe, you can leave the diced potatoes frozen and mix it all together with the chicken mixture.

Ingredients 

  • 3 cups cooked shredded chicken, I used part of a rotisserie chicken
  • 28 oz frozen bag potatoes O'Brien or regular hash browns
  • 3/4 cup sour cream
  • 10 oz can cream of chicken soup
  • 1/2 cup milk
  • 12 oz bag frozen broccoli
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1/2 cup sliced green onions
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika

Instructions 

  • Preheat oven to 350 °F.
  • Spray a 9×13 baking dish with non stick spray.
  • To a large bowl, add in the chicken, frozen potatoes, sour cream, cream of chicken soup, milk, broccoli, 1/2 cup of the cheese, bacon, green onions, and seasonings. Stir well.
  • Put into the baking dish and distribute evenly.
  • Sprinkle the remaining cheese over the top. Cover with foil and bake for 50 minutes.
  • Remove the foil and bake for an additional 20 minutes.
