Cheesy Pasta and Chicken

Ingredients

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 red bell pepper, diced

  • 1 yellow onion, diced

  • 8 oz penne pasta

  • 2 tbsp all purpose flour

  • 1 1/2 cups milk

  • 12 oz can chicken, drained (or use any cooked chicken)

  • 1 tsp salt

  • 1 tsp oregano

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 2 cups shredded pepper jack cheese

Directions

  • Bring a large pot of water to a boil add in the pasta and cook according to the package instructions.
  • To a large pan on the stove over medium heat to add in the oil and butter, once the butter has melted add in the bell pepper and onion cook for 3 to 5 minutes to start to soften the vegetables.
    Stir in the flour. Slowly whisk in the milk. Make sure you whisk it in extremely slowly so the sauce becomes silky and smooth. Let simmer for two minutes.
  • Stir the canned chicken and seasonings let cook for 2 more minutes.
  • Stir in the cheese and let the cheese melt down.
  • Stir the cooked drained penne pasta once the pasta is cooked in the sauce, serve.
