One Pot Sausage and Rice

Ingredients

  • 14 oz smoked sausage, cut into half moons

  • 2 tbsp olive oil

  • 1 green bell pepper, diced

  • 6 oz tomato paste

  • 2 1/3 cup chicken broth

  • 1 cup white or jasmine rice

  • 2 tsp salt

  • 2 tsp pepper

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp Italian seasoning

Directions

  • To a large pot on the stove over medium high heat to add in the sausage and bell pepper cook for 2 to 3 minutes to brown sausage.
  • Stir in the tomato paste.
  • Stir in the broth, rice, seasonings, and let simmer covered for 20 to 24 minutes starting occasionally until the rice is tender if the liquid line gets too low add 1/4 cup more water at a time until the rice is tender.

    First of all, please use only 1 tsp of pepper!!!!! This is an excellent dish. Very affordable ingredients that we actually already keep on hand. Great with a little crusty bread. Just needs only half the pepper in the recipe or it takes over the whole dish.
