Tuna Vegetable Wraps

Ingredients

  • 1/2 yellow bell pepper, diced

  • 3 green onions, sliced

  • 2 ribs of celery, diced

  • 1/2 red onion, diced

  • 1/2 roma tomato, diced

  • 1 cup Iceberg lettuce, sliced

  • 2 5 oz cans tuna, drained

  • 1 tbsp yellow mustard

  • 1/3 cup Mayonnaise

  • 1/2 lemon, juiced

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 4 medium sized wraps

Directions

  • To a medium sized bowl add in all of the ingredients except for the wraps and stir well and fill each wrap with the mixture then roll up into a wrap and slice in half. Enjoy!

    A tasty change-up from “the usual” tuna salad and I’ll make it again. Chopping the lettuce and stirring it in added lots of welcome crunch. For my family’s tastes, I omitted the green onions and went a bit light on the red onion, finely diced. Served on whole wheat bread, with a slice of American cheese, as well as a side of veggies & ranch dip and chips.
