Cajun Chicken Orzo is easy to make and so delicious to eat. All you need is one pot and half an hour and you’ll have a delicious meal that the whole family will enjoy. Think: spicy chicken, zesty, sun-dried tomatoes, and creamy cheesy orzo. You’re going to want to make this all the time.

I’m absolutely in love with one-pot meals. They are just so easy and cleanup is the greatest and they taste good. This one-pot Cajun Chicken Orzo is truly delicious and so simple.

Ingredients for Cajun Chicken Orzo

I absolutely love this recipe because it’s so flavorful and delicious and only has a few ingredients. Cajun seasoning, sun-dried tomatoes, and tomato paste are all packed with flavor and add so much to this dish!

  • butter
  • olive oil
  • yellow onion
  • chicken breast
  • Cajun seasoning
  • tomato paste
  • sun-dried tomatoes
  • minced garlic
  • orzo pasta
  • chicken broth
  • fresh spinach
  • Parmesan cheese
  • heavy cream

How to Make Cajun Chicken Orzo

First, you’ll add your butter and olive oil to a large skillet over medium heat. Once the butter is melted, add in your chopped onion and cubed chicken. Season the chicken well with salt and the Cajun seasoning and cook for about three minutes. The chicken will not be completely cooked through at this point but that’s okay. We’ll finish cooking it later.

Next, you’re going to add in the tomato paste, sun-dried tomatoes, and the minced garlic. Stir that up and let it cook together for one minute so that all the flavors can meld together. Add in the dry orzo pasta (not cooked orzo!) and stir well.

Add in the broth and bring the mixture up to a simmer, and let is cook for just about 15 minutes, stirring occasionally. Check the orzo every few minutes to see if the liquid gets too low and the pasta isn’t done yet. If the liquid is gone and the orzo is still tough, add in more chicken broth 1/4 cup at a time.

Once the orzo is cooked, stir in the spinach, Parmesan, and heavy cream. Let that cook until the spinach is wilted, the cheese is melted and everything is incorporated. Serve, garnished with a little more Parmesan, if you like, and enjoy.

Ingredients

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 1 lb chicken breast, cubed

  • 1 tbsp Cajun seasoning

  • 1 tbsp tomato paste

  • 1/4 cup sun dried tomatoes

  • 1 tbsp minced garlic

  • 1 cup orzo

  • 1 1/4 cup chicken broth

  • 2 cups fresh spinach, chopped

  • 1/4 cup Parmesan cheese

  • 1/4 cup heavy cream

Directions

  • To a large skillet over medium heat, add the butter and olive oil. Once the butter has melted, add in the onion and chicken. Season the chicken with a dash of salt and the Cajun seasoning. Cook for about three minutes. The chicken does not need to completely cooked throughout this point.
  • Add in the tomato paste, sun-dried tomatoes, and minced garlic. Stir and let cook together for 1 minute. Add in the orzo and stir well. Stir in the broth and bring to a simmer.
  • Simmer, covered, for about 15 minutes, stirring occasionally. If the liquid gets too low, you can add in 1/4 cup more broth at a time.
  • Once the orzo is tender, add in the spinach, Parmesan, and heavy cream. Stir and let cook for two minutes to melt the cheese and wilt the spinach. Serve and enjoy!

    I made this for the first time and it has become my husband favorite meal. I thought it was pretty good but he said it was one of the best meals I have ever made (not sure what that says about my cooking..) Super easy and flavorful, will be making this more often
