Teriyaki Chicken Veggies and Rice

Ingredients

  • 4 cups COOKED white OR brown rice

  • 1 red bell pepper, diced

  • 1 medium zucchini, diced

  • 1 medium head of broccoli, chopped

  • 2 large carrots, sliced

  • 2 tbs olive oil

  • 1 tbs minced ginger

  • 1 tbs minced garlic

  • 1/2 cup chicken broth

  • 1 cup Teriyaki sauce

  • 3 cups cooked rotisserie chicken, shredded

Directions

  • To a large pot or dutch oven add the oil over medium heat add the vegetables and let cook stirring frequently for 6-8 minutes or until tender. Stir in the cooked rice, ginger, and garlic. Stir in the broth, and teriyaki sauce let simmer for for 5 minutes stirring frequently. Enjoy!
